Whey is a collective term referring to the serum or watery part of milk that remains after coagulation. The composition of whey varies considerably, depending on the milk source and the manufacturing process involved. In general, whey is rich in lactose (milk sugar), minerals, vitamins and "whey proteins."

Natural, functional and high in nutrition, whey is the ingredient of choice for product developers. Whey ingredients have application in baked goods, beverages, confections, dairy foods, meat products, salad dressings, sauces and soups, and new uses continue to be identified and developed.

In animal feeds, whey is an excellent source of lactose and protein. The protein in whey is easily digestible and ideal for young animals.

There are many varieties of whey ingredients available, and selection is based on application and desired function. For example, whey protein concentrate (WPC), acting as an emulsifier, aids in the dispersion of shortening in many bakery products, thus reducing the amount of eggs required. WPC also supplies gloss and color to pastries and biscuits when applied as a pre-bake glaze.
